Where is Sarah??? Updates…

HELLO!!! How is it already January 23nd 2015?!?!? I have missed you guys and blogging so much! I had the best intentions to blog a lot more than I have been lately, but life happens and I have been so so so much busier than anticipated. I have so much to update you guys on… 

Where have I been? 

This time of year is when my full time job is in full swing.  I wanted to dedicate a post to explaining what I do for work, but that never happened because I got so busy.  So here is the short version. I am a district manager for a local tax company and I also prepare tax returns. I oversee 3 offices, hire, fire and train employees. I write schedules, solve computer problems, deal with unhappy clients, and the list goes on. As you can imagine, this keeps me VERY busy. Tax season is really getting into full swing now, but since Dec 30th I have been in full on prep mode getting all the offices and all the preparers up to speed to the busiest time of the year. IMG_9153The cool thing about this job is it is super busy for 5 months of the year, and the rest of the year I only work a few days a week, so I have lots of time to do other activities. That is the same reason why this job is so hard sometimes, because every year, no matter how hard you try, you always have to get back into the swing of things. Adjust to a new schedule, not get very much sleep, adjust to working 60 hours a week or more and still make time to exercise,  etc. Additionally, because everything is squeezed into 4-5 months, there is not much flexibility with the job and time required when you are in the position of leadership and management that I am. 

Blogging and what to expect

With my work schedule right now, there is barely enough time in the day for me right now to exercise, eat healthy, cook and sleep so that means there is even less time for blogging 🙁  
I mean really, I just took our Christmas tree down a few days ago. (that’s embarrassing)

here I am working on my yoga/forearm stand a few days ago… Christmas tree was still up :-/

I am finally catching up on things so my goal is to blog at least once a week. It could end up being more than once a week, but I don’t want to get anyone excited and then disappoint. 
Despite my overly hectic schedule, I am still making time to live a healthy lifestyle, eat well and exercise. It is a struggle and I know that there are many other people who struggle with balancing everything on a daily basis too. We are in this together and I will share with you my tips and tricks for how I do it.

I still need to share some about my trip to Mexico! I will have a recap on that soon. I created a few fun things that I want to share with you while I was there 😀 Also, because I know a lot about taxes, I will also be sharing a post about how your blog/side business can affect your tax return. 

 What do I have planned for 2015?

In the near future, I am going to be working A LOT. However, I am also training for a few races at the end of February and the beginning of March. When I registered for these races I just wanted them to be fun run races, but one of them is a 9 miler!! Somehow it didn’t click in my brain that I would need to do some training for a 9 mile race. Haha, oh well! I’m looking forward to it. I have never ran a race during tax season because I always assumed I would be too busy, so this is uncharted territory for me. Bring it on 2015!

I am going to be attending a conference in Orange County, CA mid-March. It focuses on creating a life by design and living life according to your rules. I am so excited to learn about this stuff and also be back in sunny California! I hope to make it to one blog conference later this year. Not sure which one yet. 

I am also MAJORLY looking forward to a trip I will be taking in early May with my girl Katie. We are gonna be hitting up Vegas. Don’t worry, neither of us are crazy party girls. We just want to go enjoy the pool, see a few shows and a concert. It’s gonna be an awesome and much needed girls weekend.

HAPPY THANKSGIVING!!!

For my readers that live in the USA…

HAPPY THANKSGIVING! 

Here is a quick workout you can try from ANYWHERE! It could be in your childhood bedroom, you mom’s kitchen, you grandma’s family room, maybe even the bathroom, your living room?!?

Why all the crazy locations? Because when traveling or visiting family, sometimes you have to get creative to fit in a workout.

Why workout on Thanksgiving? It makes you a happier, more patient person, and you feel so refreshed when you are done. Give it a try, I bet you will see a difference! 

Be sure to check out my post about food pushers (usually at least one at a family get together) – it will help you have a nice comeback  🙂 You might also find my healthy Thanksgiving recipe round-up helpful. Nothing wrong with indulging a bit but if you can make something healthier while still enjoying the decadence, why not??

Pumpkin Protein Balls [Recipe]

In honor of Halloween being on Friday, I am sharing healthy recipes every day on my blog this week!!!

Whether you have a sweet tooth or not, Halloween is the kick off to the “holiday season” where there is lots of food and lots of desserts, candies and cookies.

There is no better way to combat these tempting things than to make your own fun treats! It’s much more rewarding to experiment with a new recipe and then enjoy the fruit of your work. It  makes it more special and you can also indulge in chocolate and other sweets knowing that they are better for you because they don’t have all the additives and chemicals of the treats you find on store shelves!

Today we make:
PUMPKIN Protein Balls

Have you tried Quest Bars before?
They are some of the best protein bars out there are far as amount of protein and ingredients. They are not loaded with a bunch of crap! Click on the image below to read more!

 

My favorite flavors of quest bars are white chocolate raspberry, double chocolate chunk, cookies and cream, choc chip cookie dough and cinnamon roll! MMM!

This recipe uses the cinnamon roll bars. (Recipe card at bottom of post) Here is what you will need:

Gluten free oats, pumpkin puree, unsweetened almond milk, vanilla extract, 2 Cinnamon Roll Quest Protein Bars and maple syrup.

DSC01416Place 1/4 cup almond milk and both quest bars in a microwave safe bowl. Microwave for 1-2 mins. I did it in 30 second  intervals and stirred in-between. The quest bars will melt into the almond milk.

In a separate bowl, mix 1 1/2 cups gluten free rolled oats, 1/4 cup pumpkin puree, 2 tbs maple syrup and 1 tsp vanilla extract.

DSC01419Combine with protein bar/milk mixture. Stir together well. 
DSC01420Roll into balls. Place on parchment paper on baking sheet.
DSC01424Bake in oven or toaster oven @ 350 degrees for 20 minutes.

Ingredients
  1. 1/4 cup almond milk
  2. 2 Quest Cinnamon Roll Bars
  3. 1 1/2 cup gluten free rolled oats
  4. 1/4 cup pumpkin puree
  5. 2 T maple syrup
  6. 1 tsp vanilla extract
Instructions
  1. 1. Place almond milk and quest bars in a microwave safe bowl
  2. 2. Microwave in 30 second intervals, string in-between, until quest bars have fully melted into almond milk
  3. 3. In a separate bowl, mix all other ingredients.
  4. 4. Once milk/quest bar mixture is ready, combine all ingredients in one bowl and mix well.
  5. 5. Roll into equal size balls
  6. 6. Place on baking sheet lined with parchment paper
  7. 7. Bake in oven or toaster oven for 20 minutes @ 350 degrees
  8. 8. Remove, let cool and enjoy!

Without Fear of the Future

Fear.

It has multiple meanings.
One is that clutching feeling of being scared, feeling like you are in danger.

The other is anticipation, you don’t know what is coming, and while you are excited, you are also scared because of the uncertainty.

The second definition is how I feel now. Have you ever felt that way before?

I am sharing from my heart in this post and sharing something I normally wouldn’t put out there, but it has really been on my heart today

There are big things to come for me and my husband and while it’s very exciting, it is also very scary. Why is it scary? Because I am going to have to make big decisions that are not always going to be fun. I am going to have to tell people “no” – and I have always been a “yes” girl, a people pleaser. Why is it hard to choose what is in OUR best interest? The choice should be obvious, but when you are used to always saying “yes”, saying “no” and putting yourself first is scary.

There is going to be change, and change is scary! It’s not the “safe place” your mind is used to. It is unknown territory.

I am also going to have believe in myself, and know that I can “kill it” in anything that I set my mind to. I have to bring ALL that I have and push myself to go one step farther every time. The fact I even typed that makes me laugh inside because I have done all those things in weightloss. I proved to myself I was stronger than I thought and I overcame obstacles.

I am at a conference with my husband in Santa Clara, CA and had a lot of time to be pondering all this today.
I opened up Pinterest and an image with this Bible verse was the first that popped up…

This is my handwriting and where I put the emphasis. Strength, dignity, and NO fear. This verse was exactly the reminder and extra push I needed. While a part of me wants to continue to “be safe”, the other part of me is done with mediocrity. I am ready to go all in, no matter how scared I may feel.

I pass this on to you because no matter what you are fearing about the future – face it with strength, dignity and no fear. Follow your heart, make the hard decisions. Our creator has a divine plan and will care for you no matter what is in store. He will never give you more than you can take .
