What’s New in Life, My Workouts + Upcoming Plans [Giveaway]

Hi everyone!!! How is your summer? So far mine has been a whirlwind! So many fun things have been happening! I’m teaching a new class, my workouts have changed a little bit and I have some fun opportunities coming up that I want to share with all of you! There is also a giveaway for some plant-based protein powder, so be sure to enter at bottom of post!

Life: 

— I have mentioned this before, but I have started training people in the gym in addition to the online training I offer. I wanted to see people again in person, because I missed the interaction & I like hanging out at the gym. Doing it again has also made me remember all the reasons I don’t like it – no shows, difficult scheduling & inconsistency. 

— I am teaching SUP classes! The first one was today on Lake Washington and we had an absolute blast! Such a fun workout and a great way to enjoy some time outside. There is a beginner class as well as a SUP FIT class. They are available for 5 more weeks this summer. Click here for info on how to sign up! S U P F I T

— I have online training spots available for August! I am accepting new clients into online training programs starting in August. If you are interested, set up a free consult with me and we can talk more. It is $50 a month and you get a new workout every week! 

— I’m getting a puppy!!!! (OMG!) My dream of having a dog is coming true! My little Great Dane will be coming home in 2 weeks and I am so excited I could pee my pants. Don’t worry, he will get his own blog post. Here is a little preview pic. 

Training:

My workouts have changed a little bit since I ran the marathon. Now I am ‘”running for fun”. For me that is 3-5 miles, twice a week with a longer run on the weekend usually.  I’m also getting back to lifting weights consistently & working on building muscle + strength. I am loving that because I really missed that during the end of my marathon training. It’s not that I couldn’t weight train and run, I just didn’t have the time for it. I’m happy to be building some muscle again! 

I have been lifting 3-4 times a week, doing a few runs and I feel great. With training at the gym again, I have been eating a lot on the go. Good nutrition is important, especially for maintaining weight and/or gaining muscle. Protein bars and smoothies are my GO TO because they are so portable. My favs are Quest bars and the Amazing Grass Superfood plant-based protein. This is not a substitute for my green smoothies, but on days I can’t get one or don’t have one, all the added superfoods are AWESOME! 

Upcoming: 

BLOGFEST! I am heading down to LA later this week and I cannot wait to see all my SweatPink sisters + blog friends. This is literally the event of the year for me. I get to see so many people that I talk to online all year, and we hang out, workout & blog. All my favorite things!

You know you’re a runner when… you jump at a chance to run a race! As you may recall, my Spring race schedule is really busy in April and June, but I didn’t have any races planned in May. There were several races I was interested in, but hadn’t committed. Now that’s changed and this weekend I will be running The Color Run in Seattle!

Tropicolor! 

This will be my first time participating in The Color Run. While I love to run, the idea of getting covered in colored powder didn’t really appeal to me. I was really excited about this years theme, Tropi-Color, and was feeling adventurous, so I decided to sign up. I love pineapples and everything tropical & it sounds like Color Run is bringing the vacation to me! On the Tropicolor course we will be bathed in a tropical array of colors and delicious island scents as we run through the shade of palm trees, arches, and island-style music. I CANNOT WAIT!

 Plus my friend, Carleeh, always talked positively about the Color Run the last few years, so why not run it! I am really excited to share my race day experience with you!

The Color Run

If you are not familiar with The Color Run, it’s a run that is less about your running time and more about having the time of your life! The Color Run is a 5K with only two ‘rules’: 1)wear white at the starting line. 2) Finish plastered in color!

After finishing the race, the fun continues with an unforgettable Finish Festival with music, dancing and massive color throws, which create millions of vivid color combinations. Sounds like an awesome post-5k party!

Why Siggi’s?

Recipes

These recipes were inspired by recipes I tried at blogfest and that were featured on Siggi’s website. They have a wonderful selection of recipes. They are both delicious and very easy to make. 

Smoked Salmon with Skyr

this recipe is so yummy and makes the perfect lunch. It’s rich in protein and one of my favorites. It’s such a unique way to enjoy yogurt! 

 

IMG_6158serves 4 – you can easily reduce amounts to make one serving
What you need:
3 cups of siggi’s plain yogurt
1 Tbs Kosher salt
4 Tbs red onion, finely diced
6 slices smoked salmon, roughly chopped
2-3 tsp dried dill
1 slice gluten free bread, toasted then crumbled
1 seedless cucumber, dicedIMG_6150

Preparation:
Season the yogurt with salt, red onion, and dill.IMG_6156 Arrange the seasoned yogurt in the bottom of a bowl and garnish with the salmon, gluten free crumble, cucumber & remaining dill.
Serve.

Coconut, Date & Nut Balls

this recipe is a great combo of carbs, protein and fat which makes these perfect for on-the-go or a healthy dessert

makes 18 balls 
What you need:
1 cup Medjool Dates, chopped (about 12-13 large dates)
1 cup raw cashews
1/4 cup hemp seeds
1/4 cup chia seeds
1/2 cup almond meal
1/4 tsp fine sea salt
1/2 cup shredded unsweetened coconut plus more for rolling
1/4 cup siggi’s vanilla yogurt 
Optional: 2 Tbs cacao powder & 1 Tbs hemp seedsIMG_6164

Preparation:
Combine all ingredients in a food processor or high powered blender and blend to desired consistency. Keeping the pieces larger for a crunchier ball and smaller for smoother.IMG_6166 IMG_6167When desired consistency is reached, form 1oz balls then roll in the shredded coconut OR cacao powder and hemp seeds to coat. A Easy Summer Salad featuring FREEKEH! {recipe + giveaway}

So, what is Freekeh?

Freekeh (pronounced free-kah) is an ancient grain that is wheat which is harvested early while it is green and then it is roasted. Because freekeh is harvested young, it has more protein, vitamins and minerals than it’s counterparts. It’s very similar to quinoa in that it’s lower in carbs and higher in protein and packed with fiber making it a great grain option. The ONLY downside is it’s NOT gluten free 🙁 (stay tuned, there is a gluten free option for the recipe). IMG_5669

If you are not allergic to gluten, freekeh is definitely worth trying!

Shrimp & Avocado Freekeh Salad

Because summer is still in full swing (hang on all you pumpkin spice latte fanatics), quick and easy salads are the perfect thing for a hot day. This shrimp and avocado salad is great for lunch or dinner and is really filling.IMG_5695

If you are allergic to gluten, like me, you can make quinoa for the freekeh in this salad.
This recipe was inspired by FitMenCook

You will need:

  • 1 cup uncooked freekeh
  • 1 pound shrimp (you can buy cooked or uncooked) 
  • 1 large Haas avocado
  • 1 large cucumber
  • 2 roma tomatos
  • 1 bunch of cilantro,  chopped
  • 1/2 red onion
  • 1 bell pepper
  • 1 lime

Makes 4 servings.

1) Cook up your freekeh (or quinoa) according to directions. This will be done cooking by the time you are done prepping the rest. If you prefer, you can cook grain ahead of time.IMG_56912) If you bought uncooked shrimp, put them on now and cook them while chopping up veggies. Cook shrimp your favorite way, I grilled mine 🙂IMG_5689 3) Dice veggies, avocado and cilantro while shrimp and grain is cooking.
IMG_5692 4) Allow freekeh to cool to room temperature. Then toss together with the veggies lightly in a bowl. Squeeze with lime juice & season with salt and pepper to taste. IMG_56935) Add in the shrimp, mix lightly one last time & ENJOY! 

I made this for dinner and I enjoyed the same salad, just the gluten free version with quinoa. My husband and brother in law LOVED the freekeh. My husband liked it so much, he had a second helping. He said it had a wonderful toasty flavor to it.

Freekeh Foods makes this freekeh in 3 different flavors, original, rosemary sage and tamari. I used the regular in this recipe.

#FunFact: did you know today is national running day? In honor of this, I have a track workout for you today that will either warm you up before a run, or can be a workout in itself. Try it with me in the video! The workout moves are listed below the video. 

The workout is:
– walking lunges – 30 seconds
– single leg lunge jumps – 30 seconds each leg
– high knees – 30 seconds
– booty kicks – 30 seconds
– low straight leg kicks – 30 seconds
REPEAT high knees / booty kicks / low straight leg kicks
– forearm plank spider crunches – 10-15 each side (modify on knees if needed)
– regular plank spider cruches – 10-15 each side (modify on knees if needed)
Be sure to stretch when you are done.
