‘Take Me To the Tropics’ Smoothie Bowl [Recipe]

It’s the dead of winter and I don’t know about you but I cannot WAIT for summer to be here. The cold and dreary here in the PNW has got me wishing for the long days, warm nights, sun shining and a runner’s tan. While waiting patiently for the seasons to change, I have the perfect smoothie bowl recipe that will take you away to the tropics. It’s delicious, healthy, and the perfect wait to shorten the wait for the summer months.

I LOVE me a good smoothie bowl. They are definitely a summer staple, but really I eat them year around. When I made this one the other day, it seriously made me feel like I was on a beach, so I had to share!

For this recipe, I used a new ZICO coconut water and juice blend. It’s delicious and the mango makes this bowl extra tropical. I have seen it at Target and other places ZICO is sold. The acai packet, which is frozen acai berry puree, is from the frozen section at Trader Joe’s. Find in next to the frozen fruit. The brand Sambazon also makes a unsweetened packet which you can find at Whole Foods. If you can’t find acai packets near you, just sub in a cup of frozen fruit instead! 

When you taste the pop of tropical flavors in this smoothie bowl, imagine yourself on a beach with the warmth of the sun on your skin, palm trees overhead, a slight breeze blowing thru your hair & golden sand in-between your toes. Yessssssss. Alright… let’s get cookin…

Ingredients:

base
3/4 cup ZICO coconut water & pineapple mango juice blend
1 Trader Joe’s acai puree packet
1 scoop Quest vanilla protein powder
1/2 frozen banana
2 cups spinach
1/2 cup frozen berries 

topping suggestions
nuts
fresh fruit
chia seeds
coconut flakes
gluten free granola (check out my paleo granola recipe)
popped amaranth
nut butter
honey drizzle

Instructions:

  1. add all base ingredients to a blender. High powered blenders work best, but smaller blenders like NutriBullet will also get the job done just fine πŸ™‚ 
  2. blend on high until all ingredients are mixed. Add a little extra coconut water if needed. Remember, the texture of a smoothie bowl is much thicker than a smoothie as we are eating this with a spoon! 
  3. transfer mixture to a bowl
  4. top with your choice of toppings! For this bowl I used fresh blackberries, unsweetened coconut flakes, chia seeds and popped amaranth. You can change it up and top with whatever you like! 
  5. ENJOY!
